White Wine

Sauvignon Blanc is from Block 4 of the old Wild Dog Vineyard site which we have been farming since 2020. This block is the highest yielding part of the vineyard with incredibly rich red volcanic soils and higher nutrient content than other parts of the vineyard. The grapes were direct pressed to tank where they wild fermented until malolactic and sugar dry. Then they were racked to tank where they sat on fine lees for 7 months then racked twice and sulphured once in the lead up to bottling.
